carrot cake

                                                   HOW TO MAKE CARROT CAKE

                                                    350 degrees 40-50 minutes to cook            This is to make 2 loaves
* 1 and one half cups melted butter
* 1 and three fourth cups brown sugar
   (or 1 and one half cups honey)
* 4 eggs
* 3 tsp. Vanilla extract
* 1 tsp. Lemon juice
    Do the butter mixture in a different bowl then the flour mixture
* 2 cups whole wheat flour
* 2 cups white flour
* 1 tsp. Salt
* 1/2 tsp. Baking soda
* 3 tsp. Baking powder
* 1 tsp. Ground allspice
* 2 tsp. Ground cinnamon
                                                         * 2 and one half cups finely grated carrot

Add flour mixture and grated carrot one after another to butter mixture beginning and ending with flour, (flour, carrot, flour, carrot, flour). Then butter two loaf pans well, and then sprinkle a little flour on too.
                                             Serve plain, and with butter and cream cheese.
